It is necessary to configure the filter in the source data so that only the desktop and document folders are taken from C: / User / and so that you can set extension exceptions.
From the manual I could not figure out how to do this.
Creating a new backup job shows how you typically would just check desktop and document folders, leaving folders you don’t want unchecked. Filters (especially exclude) can tune the selections further.
