Duplicati uses a deduplication engine which allows it to store multiple versions of files efficiently on your target storage. During this process it does break up files into chunks (blocks), deduplicates, and repackages into zip.
There is no way to turn this off. If you want files in native format on your target storage, then Duplicati is not the solution for you. You may want to look into file synchronization software instead of file backup software.
