How do I restore a folder as it was backed up as at some point in time (it’s big and there will be some files before and some files after the time). It’s completely impractical to choose each file version individually.

Just as a clarification for future readers, when Duplicati does a restore it only restores files that have been backed up. It won’t remove files that were created AFTER the backup (so it’s NOT restoring a snapshot of what the folder looked like when the backup was created).
